A 200-225g Gressingham Duck breast marinaded in a slightly spicy plum sauce
Cook skin side down in a hot pan with no added fat 2 minutes then turnover the breast and cook for 4 minutes
Place in oven for 5 minutes at 1800c
Let rest for 4 minutes
